JOSEPHINOS 
1/2 c. butter, softened
1/2 c. Parmesan cheese
1/2 c. mayonnaise
1 sm. can diced Ortega chilies
2 loaves of French bread (Baguette style)

Mix together butter and chilies, set aside. Mix together mayonnaise and Parmesan cheese, set aside. Slice bread, spread equal amount of butter-chili mixture on each slice of bread, top with equal amounts of mayonnaise-Parmesan mixture. Put under broiler until golden brown.

Our family has made a version of this for 40 years-absolutely delicious! We used jack cheese and sometimes included scallions It was said that this was an original appetizer recipe from the Spaniards who settled Southern California. My mother got the recipe at a Fiesta party she attended. We mixed butter and chilies separately and brushed on bread, then added cheese so mixture before broiling. We froze leftover butter for another day Give this one a try. Yum!
