APRICOT-ORANGE MOLD | |
2 (3 oz.) pkgs. orange flavored gelatin 2 c. boiling water 1 (11 oz.) can mandarin orange segments 1 (17 oz.) can apricot halves 1/3 c. pecans 2 tbsp. lemon juice 1/2 tsp. salt Put gelatin in blender and add boiling water. Blend on low speed to dissolve gelatin. Drain oranges, reserving liquid. Set oranges aside. Add reserved orange liquid to gelatin along with apricot halves, pecans, lemon juice and salt. Blend just until pecans are chopped. Remove from blender. Chill until partially set. Fold in orange sections. Pour mixture into 6 1/2 cup mold or 10 to 12 individual 1/2 cup molds. You may use almonds instead of pecans. Chill until firm. Makes 10 to 12 servings. |
