BROILED CHICKEN 
Preheat broiler or cook over charcoal.

4 chicken breasts
6 tbsp. butter, melted
2 tbsp. mild Dijon mustard
2 tbsp. lemon juice
1 tsp. tarragon
1 tsp. salt
Freshly ground black pepper

Dry the chicken pieces and brush with a portion of the combined ingredients. Broil on the first side for 15 minutes, basting the pieces after 7 or 8 minutes. Turn and repeat basting and broiling process.
