ITALIAN CREAM CAKE | |
1 stick butter 2 c. sugar 2 c. plain flour 1 tsp. baking soda 1 c. nuts, chopped (black walnuts or pecans) 1 tsp. vanilla 1/2 c. oil 5 egg yolks 5 egg whites, beaten stiff 1 c. buttermilk 1 sm. can coconut Cream butter, egg yolks, oil and sugar. Mix soda with flour and add alternately with milk to creamed mixture. Add nuts, coconut and vanilla. Fold in egg whites. Bake in 3 (8") cake pans at 350 degrees for 25 to 30 minutes. ICING: 1 (8 oz.) pkg. cream cheese 1/2 - 3/4 stick butter 1 box confectioners' sugar 1 tsp. vanilla Beat cream cheese and butter until smooth. Add confectioners' sugar and vanilla. Stir in 1 cup chopped nuts (optional). Spread between layers and top and sides. |
