TEXAS CAVIAR 
1 can black eyed peas, drained
1 can white hominy, drained
2 med. tomatoes, deseeded and chopped
4 green onions, thinly sliced
2 garlic cloves, minced
1 med. green pepper, finely chopped
1/2 c. chopped onion
1/8 to 1/4 c. chopped fresh cilantro or parsley, as desired
1 cup Pace picante sauce

Don't you dare use none a them sweet New Jersey imitations!

Combine all ingredients; mix lightly. Cover; chill at least 2 hours or up to 24 hours, stirring occasionally. Drain before serving. Serve this colorful Southwestern appetizer with tortilla chips.
