FRESH APPLE CAKE 
4 c. chopped apples
2 c. sugar
2 eggs, slightly beaten
1/2 c. vegetable oil
2 tsp. vanilla
2 c. flour, sifted
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
1 c. nuts, chopped
13x9x2 pan

GLAZE:

1 1/2 c. powdered sugar
1 tbsp. lemon juice
1 tbsp. melted butter
Pinch salt
Milk to wet

Mix apples and sugar; set aside until sugar turns to liquid (about 25 to 30 minutes).

Mix apple mixture, eggs, vegetable oil and vanilla by hand. Add flour, soda, cinnamon, salt and nuts. Do not over mix. Pour into well greased pan. Bake 350 degrees 1 hour. Frost while hot with glaze.
