PARMESAN CHICKEN 
4 - 6 boneless, skinless chicken breasts
1/2 stick butter
1 tbsp. lemon pepper
2/3 c. Saltine crumbs (finely crushed)
2/3 c. Parmesan cheese

Spray 9 x 13 inch glass dish with Pam. Preheat oven to 325 degrees. Melt butter in small pan. Mix together in shallow bowl lemon pepper, Saltines and Parmesan. Pound chicken to flatten. Dip in butter, then coat well in crumb mixture. Roll up and place seam side in glass dish. Cook about 30 minutes or until golden brown.
