CRACKER PUDDING 
2 c. milk
1/2 c. sugar
Dash salt
2 eggs, beaten
1 tbsp. butter, melted
1 c. cracker crumbs (graham or saltines)
1 c. coconut
1 tsp. vanilla

Combine milk, sugar and salt. Heat to dissolve sugar. Pour milk mixture into beaten eggs. Add butter and cracker crumbs. Cook, stirring constantly, until thickened. Stir in coconut and vanilla. Pour into serving dishes. Chill.

Variation: Separate eggs, adding yolks as above. Beat whites until stiff and fold into cooked, thickened mixture along with the coconut.
