SHRIMP AU GRATIN 
3/4 lb. cooked shrimp
3 tbsp. onion
3 tbsp. butter, melted
1/4 c. flour
1 1/2 c. milk
1/2 tsp. salt
Pepper to taste
1/4 tsp. dry mustard
1 c. Velveeta cheese, grated
1 tbsp. butter
1/4 c. dry bread crumbs

Cook onion in butter until tender; blend in flour and seasonings. Add milk slowly, stirring constantly. Cook until thick. Add 3/4 cup cheese and melt. Stir in shrimp and pour into greased casserole. Combine butter, bread crumbs, and remaining cheese. Sprinkle over the top of the casserole. Bake at 400 degrees for 10 minutes or until brown.
