HEARTS OF PALM - COINTREAU SALAD | |
1 (14 oz.) can hearts of palm, cut into 1 inch slices 1/4 lb. butter 1 tbsp. chopped pimento 1/4 c. chopped pecans, salted 1 tbsp. Cointreau, or other orange liqueur Crisp chilled Bibb lettuce cups for garnish Drain vegetables and saute in butter with pimento and pecans until just heated through. Add Cointreau and stir to blend. Serve hot on chilled lettuce cups (contrast hot and cold adds to flavor). |
