DIABETICS PIE 
2 pie shells, cooked and cooled
12 oz cottage cheese
1 box any flavor, unsweetened jello
2 tbsp cornstarch
1 can crushed pineapple, drained
1 can fruit cocktail, unsweetened
8 oz cool whip

Mix cottage cheese, sprinkle in dry jello and stir. Add cornstarch, pineapple, and fruit cocktail. Gently fold in cool whip. Fold into two pie shells, set in refrigerator.
