BANANA MUFFINS 
1 egg
2 c. Bisquick baking mix
1 1/4 c. mashed ripe bananas
1/3 c. sugar
3 tbsp. vegetable oil

Heat oven to 400 degrees. Grease bottoms only of 12 medium muffin cups, 2 1/2 x 1 1/4 inches or line with paper baking cups. Beat egg slightly. Stir in remaining ingredients just until moistened. Divide batter evenly among cups. Bake until golden brown, about 15 minutes.

For high altitudes: Heat oven to 425 degrees. Use 14 medium muffin cups. Decrease sugar to 1/4 cup.
