WHEAT, OAT, AND CORNMEAL
PANCAKES
 
1/2 c. stone ground cornmeal
1/4 c. whole wheat flour
1/4 c. Miller's Bran
1/4 tsp. baking powder
Pinch of salt
2 tbsp. butter
2/3 c. buttermilk
2 eggs

Blend cornmeal, flour, bran, baking powder, and salt in mixing bowl. Make a well in center and add: Butter, buttermilk, and eggs. Beat just to moisten the flour and beat in butter. Bake on non-stick griddle or one moistened with fat. Makes 4 thick pancakes.
