2 gallons cucumbers 3 gallons boiling water 1 pt. salt 2 tbsp. alum 5 c. vinegar 2 1/2 c. water 1/3 sm. box of pickling spice 7 pt. sugar Cut cucumbers lengthwise. Pack in large earthen jar or other large jar. Pour 1 gallon boiling water with 1 pint salt over cucumbers. Cover with another gallon of water; let stand 24 hours. Drain. Pour remaining 1 gallon boiling water with alum over. Let stand 24 hours. Drain. Mix together vinegar, 2 1/2 cups water, and pickling spice; heat to boiling and pour over cucumbers. Let stand 24 hours. Drain off liquid. Pack cucumbers in hot jar. Heat liquid to boiling; pour over cucumbers. Seal jars. |
