ALL-PURPOSE QUICK CAKE 
1/2 c. butter
1 1/4 c. sugar (or fructose)
2 eggs
2 3/4 c. unbleached flour
2 1/2 tsp. baking powder
1 tsp. salt
1 1/4 c. milk
1 1/2 tsp. vanilla

Cream butter and sugar; add eggs and beat well. Add other ingredients all at once; stir until blended, then turn into greased and floured (6 1/2 x 10 inch) pan. Bake at 350 degrees for 30-40 minutes. Let stand in pan 5 minutes; invert and cool; frost.

Preparation time: 45 minutes. Yield: 8 servings.

Hint: Makes extra good cup cakes!
