ALOHA LOAF 
1/2 c. butter
1 c. sugar
1/2 c. mashed ripe banana
2 c. sifted flour
2 eggs
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 (8 oz.) can crushed pineapple, in its own juice
1/2 c. shredded coconut (opt.)

Cream butter and sugar until light and fluffy. Add eggs; mix well. Stir in banana. Sift together flour, baking powder, baking soda and salt. Add to creamed mixture; mix well. Fold in undrained pineapple and coconut. Pour into greased and floured 9"x5" loaf pan. Bake at 350 degrees for 1 hour 10 minutes or until tests done. Let stand 10 minutes. Remove from pan to cool. 1 loaf.
