SOFT GINGER COOKIES 
3/4 c. butter, softened
1 c. brown sugar
1/4 c. molasses
1 egg
2 1/4 c. flour
2 tsp. baking soda
1/2 tsp. salt
1 tsp. ginger
1 tsp. cinnamon
1/2 tsp. cloves

Cream together butter, brown sugar, molasses and egg. Sift remaining ingredients together and add to creamed mixture. Mix well. Roll into walnut-sized, roll in sugar. Place on ungreased cookie sheet. Bake at 375 degrees for 6-8 minutes. Makes about 2 1/2 dozen.

If you like a flatter, crisper cookie you can flatten then with a pancake turner after you remove them from the oven.
