"HOPEFULLY" SOFT GINGER COOKIES 
3/4 c. shortening
1 c. sugar
1/4 c. molasses (mild)
1 beaten egg
3 tsp. baking soda
2 c. sifted flour
1 tsp. cinnamon
1/2 tsp. salt

Melt shortening over low heat and let cool. Dump in sugar, molasses and beaten egg. Beat well. Sift rest together and add. Chill a bit. Roll 1 inch balls in granulated sugar and bake at 350 degrees for 8 to 10 minutes. (Not too long because they harden.)
