SOFT GINGER COOKIES 
6 to 8 c. flour
1 1/2 tsp. cinnamon
2 tbsp. ginger
1/4 tsp. nutmeg
1 c. shortening
1 c. sugar
1 egg
2 c. molasses
2 tbsp. vinegar
4 tsp. baking soda
1 c. boiling water

Sift 6 cups flour and spices. Cream shortening and sugar, add egg. Beat all together until light. Add molasses and vinegar, then sifted dry ingredients. Last add baking soda dissolved in boiling water. Add more flour to make soft dough. Drop by teaspoons onto cookie sheet. Sprinkle with sugar. Bake at 350 degrees for 8 to 10 minutes. Bakes 100 plump, spongy cookies.
