SCALLOPED TOMATOES 
1 qt. tomatoes, with water
2 individual row packages of saltine crackers
1/2 med. onion, chopped
Dot with butter
Salt and pepper optional

Bake at 350 degrees for 45 minutes until crusted and light brown. In a casserole dish add tomatoes with water. With a rolling pin crush crackers into crumbs and add to tomatoes. Chop up onion and add. Mix together and let stand 15 minutes. Should be the consistency of a pudding. Dot with butter and bake.
