TIROPETES 
4 eggs
1 pound feta cheese, crumbled
1 pint cottage or ricotta cheese
1/2 cup grated Parmesan cheese
1 package filo dough
1/2 teaspoon black pepper

Preheat oven to 400°F.

Bent eggs thoroughly, then add the 3 cheeses, and mix well.

To prevent the filo sheets from drying, work with a small amount at a time, leaving the rest in the refrigerator til you're ready to use them.

Lay a single sheet of filo on a work surface (a silicone sheet or parchment paper keeps it from sticking) and quickly brush the sheet of filo with melted butter.

Cut into long strips 2 inches wide. Drop a teaspoonful of the cheese mixture at the bottom and fold up in a triangular shape.

Bake for 10 minutes or until golden brown.
