KENTUCKY BISCUITS | |
4 c. Bisquick 1/4 lb. (1 stick) cold butter 2 tbsp. sugar 1 c. buttermilk (not sour milk) Egg wash of 1 beaten egg and 1 tbsp. water Put Bisquick into large mixing bowl. Slice butter into it. Work the mixture together until crumbly and bits of butter are barely noticed. Work in sugar and then buttermilk with a large spoon. Dip hands into just enough more Bisquick that you can knead the dough right in the bowl until smooth and elastic. Pat out dough on sheet of waxed paper to 1 inch thickness. Use 6 ounce juice can, both ends removed and sprayed inside with Pam to cut biscuits. Dip tops of each in egg wash. Bake close together in greased 8 inch round pans, 450 degrees, for 20 minutes or until golden brown. Makes 18. |
