CONNECTICUT CLAM CAKES 
2 eggs
1 c. milk (or substitute clam juice)
1 c. clams (save juice)
2 c. flour
3 tsp. baking powder
1 tsp. salt (or less)
1 tsp. sugar

Mix together all ingredients. Deep fry, dropping into the hot oil with an ice cream scoop. Cook 5 minutes or until golden brown on the outside and cooked through the middle.
