CHICKEN CASSEROLE 
1 1/2 c. cooked rice
4 chicken breasts, cooked & chopped
1 can cream of chicken soup
1/2 tsp. salt & pepper
1/2 c. chopped onions
1 c. diced celery
2 hard boiled eggs, peeled & sliced
1 tbsp. lemon juice
1/2 c. mayonnaise
1/4 c. water
1 c. crushed potato chips

Mix all ingredients except potato chips. Pour into casserole dish and bake at 450 degrees for 15-20 minutes. Add crushed potato chips and bake an additional 5-10 minutes or until bubbly.
