MICROWAVE LASAGNA 
1 lg. lean ground beef
1 (15 oz.) jar spaghetti sauce
1/2 c. hot water
4 to 5 uncooked lasagna noodles
2 c. Ricotta or cottage cheese
3 c. shredded Mozzarella cheese
1/2 c. Parmesan cheese

Place beef in a 2 quart microwave-proof casserole. Cover and cook on high 5 minutes, stirring once during cooking time. Pour off fat. Add spaghetti sauce and water; mix well. Spread 1/3 the meat in a 7 x 12 x 2 inch micro-proof dish. Arrange 1/2 the uncooked noodles over sauce. Spread with half the Ricotta. Sprinkle with 1 cup of Mozzarella. Repeat layers, ending with meat sauce. Top with Parmesan.

Double wrap tightly with plastic wrap. Cook on high for 20 minutes. Cook on power 50, 15 to 20 minutes. Sprinkle with remaining Mozzarella. Cook on high 2 to 2 1/2 minutes or until cheese melts. Serve with additional Parmesan, if desired.

Since microwave ovens vary in power, you may need to adjust your cooking time.
