MIKE'S POTATOES 
3 tbsp. butter
3 med. baking potatoes, unpeeled, boiled, & diced
1 1/4 c. grated Monterey Jack cheese
1 1/4 c. grated Cheddar cheese
2/3 c. tomato, diced (1 med.)
2 tbsp. onion, minced
2 tbsp. scallion, chopped
1/2 c. avocado, diced
1/2 c. sour cream

Melt butter and brown potatoes; add tomatoes, cheese and onion. Stir until cheese melts then gently stir in avocado. Pass sour cream at the table.
