BANANA-NUT BREAD 
1/2 c. butter
1 c. sugar
2 eggs
1 1/2 c. mashed ripe bananas (3 med.)
1/3 c. chopped walnuts
2 c. flour (up to 1 c. can be whole wheat)
1 tsp. baking soda

Cream butter and sugar. Beat in eggs, then add mashed bananas and nuts. Add flour and soda, stirring just until combined. Bake in greased bread pan about 1 hour and 10 minutes, until toothpick inserted in center comes out clean. Remove from pan and cool. Wrap and store in refrigerator for easy slicing.
