SPINACH AMY 
3 (10 oz.) pkgs. frozen spinach, cooked, drained well and chopped
1 (8 oz.) carton sour cream
1/2 lb. cooked bacon, drained and crumbled
2 cups sharp Cheddar cheese, grated
4 Tbsps. chopped onion
Garlic or seasoned salt to taste
Black pepper to taste
2 cups herbs stuffing mix
1 cup melted butter (may mix directly into other ingredients or use as a topping)

Mix all ingredients while spinach is hot and pour into buttered casserole. Bake at 325 degrees for 20-30 minutes. Serves 6-10 people. May be made in advance, it freezes well. For a "Florentine" dish cover spinach with crabmeat or cooked shrimp, then cover with a medium cream or cheese sauce and bake. Also good with leftover ham and served with eggs.
