POTATO PANCAKES 
6 med. potatoes (raw)
4 eggs
1/2 tsp. salt
1/4 tsp. pepper
Applesauce

Peel potatoes and shred in a food processor or grate with a grater.

In a large bowl, mix shredded potatoes with the eggs, salt and pepper.

In a large skillet, in hot oil, spoon potato mixture to make pancakes 2-3 inches in diameter. Fry until golden on both sides. Serve with warm applesauce. Goes well with ham.
