GREAT CHICKEN CASSEROLE 
1 (3 lb.) chicken (preferably white meat)
1/3 c. chopped cashews
1/2 c. coffee cream
1 c. chicken broth
4 oz. noodles, cooked
1 sm. onion
3 stalks celery
1 sm. can mushrooms
1/2 c. cream of mushroom soup
1 1/4 c. American cheese, grated

Stew chicken with onion and celery until very tender. Let cool. Cut up. Put layer of noodles in bottom of casserole, then layer of chicken and mushrooms, layer of noodles, then more chicken and cashews. Cook chicken broth until rich, add coffee cream and cream of mushroom soup. Pour mixture over top of casserole, sprinkle grated cheese over top and bake at 350 degrees until dish is bubbly and the cheese is melted.
