EASY EGGS BENEDICT 
3/4 c. mayonnaise
1/2 tsp. salt
1/4 c. heavy cream, whipped
1 tsp. grated lemon rind
1 tbsp. lemon juice
4 English muffins, split and toasted
8 ham slices
8 poached eggs
Butter

Mix mayonnaise and salt in saucepan. Cook over low heat for 3 minutes. Stir in whipped cream, lemon rind and juice. Cook additional 3 minutes. Spread muffins with butter, arrange ham slices, then egg over muffin halves. Spoon on sauce.
