HAYSTACK COOKIES 
2 lg. egg whites, slightly beaten
1/2 c. packed light brown sugar
1/4 c. vegetable oil
1 tsp. cinnamon
1/2 tsp. baking soda
2 tbsp. water
1 tsp. vanilla
1/8 tsp. salt
1 1/2 c. crunchy nut-like cereal nuggets with raisins
1/2 c. unprocessed oat bran
1/2 c. unsifted flour
1/4 c. chopped walnuts
1/4 c. chopped dried apricots

1. Heat oven to 350 degrees. Grease 2 cookie sheets.

2. In large bowl combine egg whites, sugar, oil, water, cinnamon, vanilla, baking soda, and salt. Stir in cereal, oat bran, and flour. Fold in walnuts and apricots.

3. Drop batter by heaping teaspoon onto greased baking sheet. Bake cookies 15 minutes or until browned and firm. Cool on wire rack; store in airtight container.
