VEGGIE PIZZA 
1 c. cottage cheese
1/4 c. finely grated Romano cheese
1 tbsp. fresh oregano, minced
1 (12-inch) prebaked thin pizza crust
1 c. broccoli florets, blanched
1/2 c. mushrooms, thinly sliced and sautéed lightly in oil
8 to 10 pitted black olives
1/2 c. chopped plum tomatoes
1 tbsp. finely grated Parmesan cheese

Preheat oven to 450°F. In a small bowl, mix the two cheeses with the oregano and set aside. With a teaspoon, drop the cheese mixture evenly over the crust. Scatter the broccoli, mushrooms, olive and tomatoes over the cheese. Sprinkle with Parmesan cheese.

Bake for 15 to 20 minutes. Let cool five minutes before cutting.

Serves 4 to 6.
