FETTUCINI ALFREDO 
1 stick of butter
2 tbsp. flour
1 qt. half and half
1 c. Parmesan or Romano, grated
1 c. sharp cheddar, shredded
1 to 1 1/2 lb. fettucini
Season to taste

Melt butter, then add flour to make a roux. Then add half and half, heat. Add cheeses. Meanwhile, cook fettucini as directed. Drain, then toss with sauce.

Serve as is as a side dish or add anything for a main dish such as: crab meat (imitation) and baby peas, broccoli and ham, mushrooms, assorted "prima vera" type veggies.
