SPICY LOUISIANA MEAT LOAF 
2 whole bay leaves
1 tsp. salt
1 tsp. cayenne pepper
1 tsp. black pepper
1/2 tsp. white pepper
1/2 tsp. ground cumin
1/2 tsp. ground nutmeg
4 tbsp. butter
3/4 c. minced onions
1/2 c. minced celery
1/2 c. minced green bell peppers
1/4 c. minced green onions
2 tsp. minced garlic
1/4 tsp. Tabasco sauce
1 tbsp. Worcestershire sauce
1/2 c. cream
1/2 c. ketchup
2 lbs. ground beef
2 eggs, lightly beaten
1 c. bread crumbs

Combine the first 7 ingredients in a bowl and set aside. Melt the butter in a skillet over medium heat. Add the onions, celery, bell peppers, green onions, garlic, Tabasco, Worcestershire, and seasoning in bowl. Saute until mixture starts sticking to pan, stirring occasionally and scraping the pan bottom. Stir in the milk and ketchup. Remove from heat and allow mixture to cool. When mixture has cooled, add it to the ground beef in a large mixing bowl. Also add the eggs and bread crumbs. Mix by hand until thoroughly combined, being sure to remove the bay leaves. Mold into a oval shape in a 13 x 9 inch baking pan. Bake, uncovered, at 350 degrees for 55 minutes. Remove and let sit 5 minutes. Slice and serve immediately.

Serves 6 to 8.
