RIDGE ST. STIR FRY | |
1 lb. pork tenderloins 1 clove crushed garlic 1 tsp. whole fennel seed 1 tbsp. olive oil 1/4 c. red wine 1 tsp. sugar 1/4 c. sliced onions 1/2 lb. sliced mushrooms 1 tbsp. fresh ground ginger Salt and pepper to taste Heat a wok or a large fry pan on high heat. After the pan is hot, add olive oil, garlic, onions, mushrooms and ginger. Stir the ingredients until the onions are transparent and the mushrooms are tender. Remove the mixture and set aside. Next cut up the tenderloins into 1/4 inch strips. Add one teaspoon of oil to the pan and add the tenderloins. Stir fry over high heat until the pork is lightly browned. Add the sauteed garlic, mushrooms, ginger and onions along with the sugar, salt and pepper. Reduce heat to medium, add the wine and simmer until all the ingredients are tender. Serve with rice or pasta, green salad and a white wine to complete the meal. The mixture of fennel, garlic an pork will have the flavor of Italian sausage, but you will have very little fat in your meal. |
