SPANISH RICE 
3/4 c. raw rice
1/4 c. oil
1 rib celery, diced
1/2 green pepper, diced
1 tsp. Chili Quick
2 tsp. medium picante sauce
1 c. canned tomatoes
2 c. water, approximately
Salt & pepper to taste

Saute rice, oil, celery, green pepper until lightly browned. Add remaining ingredients. Cover tightly and cook over low heat until liquid is absorbed and rice is tender.
