BANANAS FOSTER 
1 c. brown sugar
1/2 c. butter
8 ripe bananas, peeled and sliced lengthwise
3/4 tsp. cinnamon
1/2 c. banana liqueur
1 c. white rum
8 lg. scoops French vanilla ice cream

Melt brown sugar and butter in flat chafing dish. Add bananas and saute until tender. Sprinkle with cinnamon. Pour in banana liqueur and rum over all and flame. Baste with warm liquid until flame burns out. Serve immediately over ice cream.

If chafing dish will not accommodate all the ingredients at the same time, perhaps making smaller portions at a time will be easier. This dish can be made on the stove, but it could be made at the table so the guests can enjoy the flame. Serves 8.
