PUMPKIN SQUARES | |
1 (16 oz.) can pumpkin, 2 c. 4 eggs 1 2/3 c. sugar 1 c. oil 2 c. flour 2 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 1 1/2 or 2 tsp. cinnamon 1 (3 oz.) pkg. cream cheese, softened 1/4 c. butter 1 tsp. vanilla 2 1/2 c. sifted confectioners' sugar In mixing bowl beat pumpkin, eggs, sugar and oil until light and fluffy. Stir together flour, baking powder, soda, salt and cinnamon. Add flour mixture to pumpkin mixture and blend until there is no trace of flour. Spread into an ungreased 15 1/2 x 10 1/2 x 1 inch pan. Bake at 350 degrees for 25 to 30 minutes or until toothpick inserted in center comes out clean. For frosting, mix cream cheese and butter. Stir in vanilla, and add confectioners' sugar a little at a time. Beat until smooth and spread on cooled squares. Makes 50 to 60 squares, depending on how large they are cut. |
