MEXICAN SKILLET SUPPER 
1 lb. ground beef
1/2 c. onion, chopped
1 (14 oz.) tomatoes
2 tsp. instant beef bouillon cubes, crushed
2 tsp. chili powder or to taste
1 1/2 c. UNCLE BEN'S® converted rice, cooked
1 c. lettuce, shredded
1 c. Cheddar cheese, grated

Brown beef and onion; drain fat. Add tomatoes with liquid, bouillon and chili powder. Bring to boil, stirring to dissolve bouillon and break up tomatoes. Stir in cooked rice. Reduce heat, cover and simmer until liquid is absorbed, about 5 minutes. Top with shredded lettuce and cheese before serving. Makes 4 servings.
