WILD RICE SOUP | |
4 slices bacon, cut small 1/4 c. minced onion 1 (10 oz.) can cream of potato soup 1 pt. skim milk (Carnation lite is good) 1 c. shredded Formagg Cheddar cheese (lowfat) 1 c. cooked wild rice Saute bacon and onion. Drain and pat; set aside. Put soup and milk in pan and simmer 2 minutes. Add bacon, onion, rice and cheese. Stir until blended. Stir often so it doesn't stick. |
