VEGETABLE BEEF SOUP | |
2 lb. beef Lg. chicken, boned 4 qts. water 1/3 c. barley 1/3 c. baby lima beans 1/3 c. green and yellow split peas 6 to 7 carrots, sliced 4 to 5 strips celery, sliced 1 lg. onion 16 oz. can tomatoes, chopped 2 lg. bay leaves 3 lg. potatoes, cut in 1/2 in. cubes Salt and pepper Add beef and bone to water with salt. Bring to boil, skim off top and cook for 1 hour. Add barley, green and yellow peas and lima beans. Cook for 1 hour. Remove beef and cut into small pieces. Put back in pot. Add carrots, celery, onion, tomato and bay leaves. When vegetables are almost done, add the potatoes. Cook until everything is tender. Add more water if needed. |
