HAWAIIAN CARROT CAKE | |
3 c. flour 2 tsp. baking powder 2 tsp. baking soda 2 tsp. cinnamon 1 1/3 c. vegetable oil 1 c. crushed pineapple, drained 2 c. sugar 1 tsp. salt 1/4 tsp. mace 4 eggs 2 c. shredded carrots Preheat oven to 350 degrees. Combine all ingredients in a large mixing bowl. Mix at medium speed until thoroughly moistened (about 2 minutes). Continue beating at high speed for 5 minutes. Pour into greased 13 x 9 x 2 inch baking pan. Bake for 45 minutes to 50 minutes. Completely cool and frost with cream cheese frosting. ICING: 1 lb. box powdered sugar 1 cube of butter 1 (8 oz.) pkg. cream cheese 1 tbsp. vanilla |
