RICE PUDDING (MICROWAVE) 
Place the following in a 2-3 quart covered container:

1 1/2 c. milk
1 egg yolk
1/2 tsp. vanilla extract
1 c. instant rice
1/4 tsp. salt
3 1/2 oz. pkg. instant vanilla pudding
1 c. raisins
dash of cinnamon or nutmeg

Microwave for 9 minutes. Allow to set 2-3 minutes after removing from oven.

Serve with whipped cream, if desired.

Since microwave ovens vary in power, you may need to adjust your cooking time.
