RICE PUDDING 
1 c. rice, washed and drained
2 c. cold water
1 tsp. salt
2 c. milk
1 egg, slightly beaten
1/2 c. sugar
1 tsp. cornstarch
1 tsp. vanilla

Bring rice, salt, and water to boil and simmer 12 minutes, covered. Let stand off heat, covered for 10 minutes. Add remaining ingredients and stir until mixture boils. Remove from heat and add vanilla. Good warm or cold.
