ELLIE'S CONCOCTION 
2 lbs. ground beef
1 c. rice, uncooked
1/2 bell pepper
1 onion
2 cans sliced mushrooms (4 oz. cans)
1 (16 oz.) can whole kernel corn (optional)
1/4 tsp. marjoram (optional)
1/4 tsp. thyme leaves (optional)
1 (16 oz.) canned tomatoes
Salt and pepper to taste

(I prefer Cajun Creole seasoning). In a large heavy pan, brown ground beef, bell peppers and onions together. Drain. Cook rice half done. Add to ground beef. Add spices, corn, mushrooms and enough tomatoes and juice to add moisture. Bring to boil, simmer 15 minutes or until rice is done.
