STUFFED FLANK STEAK | |
2 tbsp. butter 1 med. onion 3 c. soft bread crumbs 1/2 tsp. poultry seasoning Fat 1/2 tsp. salt Dash of pepper 1 egg, well beaten 1-2 lb. flank steak Preheat oven to 325 degrees. Melt butter in 10-inch skillet. Add onion; cook until golden brown. Add bread crumbs, poultry seasoning, 2 tablespoons fat, salt, pepper, 3 tablespoons hot water and egg; mix well. Spread on steak. Roll as for jelly roll; tie securely with string. Heat fat in skillet. Brown steak roll on all sides. Sprinkle with additional salt and pepper; add 1/2 cup boiling water. Cover. Bake for 1 hour and 30 minutes or until steak is tender. Yield: 4 servings. |
