MINIATURE CHEESE CAKES 
1/3 c. sugar
8 oz. pkg. cream cheese, softened
1 egg
1/2 tsp. vanilla

Cream sugar and cheese with electric mixer. Beat in egg and vanilla. Fill regular size cupcake liners 3/4 full. Bake in 300 degree oven 25 to 30 minutes. Be careful not to over bake. There should be no browning. Serve with topping (recipe follows). Makes 6 cheese cakes 2 1/2 inches in diameter. For miniature cup liners: bake 15 minutes. Makes approximately 24 miniature cakes.

TOPPING:

1/3 c. dairy sour cream
1 1/2 tbsp. sugar
1/8 tsp. vanilla

Mix ingredients; spoon approximately 1 rounded teaspoon on each cupcake. Turn oven down to 250 degrees and bake 5 minutes more. At end of cooking, will still look raw.
