RAISIN RICE PUDDING | |
1/2 c. rice 1 qt. milk 1/2 c. seedless raisins 1/3 c. butter 3 eggs, beaten 1/2 c. to 1 c. sugar 1 tsp. vanilla 1/4 tsp. salt Cinnamon or nutmeg Mix rice with 2 cups milk in top of double boiler; cook over hot water until tender. Add raisins and butter. Combine eggs, sugar, vanilla, salt and remaining milk. Stir into hot rice mixture. Pour into greased 1 1/2 quart baking dish. Sprinkle with cinnamon. Set dish in pan, fill half full of warm water. Bake at 325 degrees to 350 degrees for 30 minutes or until set. |
