RAISIN RICE PUDDING | |
2 c. water 1/2 tsp. salt 1/2 c. white rice, uncooked 1/4 c. raisins 2 tbsp. cornstarch 1 1/4 c. skim milk 1 1/2 tsp. vanilla extract 6 packets (6 grams) Equal Tabletop Sweetener Bring water and salt to a boil in a medium saucepan. Stir in rice and raisins. Return to a boil, then reduce heat to low. Cover and cook 30 minutes. Mix cornstarch with milk, stirring well. Add slowly to rice mixture, mixing well. Continue cooking and stirring over low heat until mixture thickens. Remove from heat, add vanilla and Equal; refrigerate. Garnish with ground nutmeg, just like Grandma did! Servings: 6. |
